What's the best one day excursion from Madrid?

My husband, teenage daughter and I will be visiting Spain for the first time, but we only have four days. We planned to spend the whole time in Madrid, but are also considering a side trip somewhere. We will not have a car; could stay over one night somewhere; budget is a consideration. We like art, food, history and just walking around.
